hi i'm new and i'm trying to capture an animal during a battle but i don't know how to.

It kind of depends on what you're wanting to do. The pet in the middle of your battle screen is in the tanking position. So you'll want it to have a build that can take the hits. The other two aren't hit as often and can be glass cannons.
There's some flexibility in what you can do in builds.
The two most powerful tanks currently in the game I think are shadow and water. Earth is a bit weak currently in comparison. I've heard of light also being used for tanking but I'm not sure how good it is compared to the others.
For the tank, you probably couldn't go wrong with health. There are agility builds though. I use one myself. If you use a magical tank build you'll want gear with intelligence and magical damage for the relic. Intelligence boosts magical damage. If you use a physical damage tank you'll want strength and physical damage instead. And you'll want gear with agility to help with mitigation regardless of the damage type.
For the glass cannons, my personal favorites are light, fire, and air. I put five points of health into each for added survivability. Some people put points into their main stat either being intelligence for light and fire or strength for air and some put their points into abilities. I personally like putting into abilities on at least light and fire but I've not tried putting into their main stat.
Light is good for helping with healing. You'll want intelligence gear to help increase their magical damage and dexterity instead of agility since that'll help increase crit.
Fire is good at multi-targets. They need the same gear as light.
Air is good at single target. Their attacks do physical damage instead so you'll want strength gear to help increase the physical damage. They also benefit more from dexterity than agility.

As you explore you'll eventually encounter a scripted event that will let you catch your first sylesti. Here's a link to a thread that talks about the Capture a Sylesti quest.

Wait, there's types? Like shadow/air/water? I've never heard of those, how do I see/pick them?

Not really types, just different movesets with different effects. :)
You'll see them in each pet's proficiency page, which is viewable at lvl5. You can see it by clicking "proficienies" on the pet's profile page. You'll get one point every 5 levels that you can distribute to the trees.

Ah, okay. thank you!
Also, how do you capture a Sylesti? I was in battle and I saw one, so I tried using a trap on it. The inventory button turned green when i selected the trap and clicked the enemy, but it wouldn't let me hit "use turn", so I just attacked it. Nothing happened, but it still used up my trap. I tried again but this time i used Mend, and the battle ended. I went into my stables and the Sylesti isn't there...is there supposed to be some notification or something?

sorry for posting so much ^^;
I found Cereth at the Fungus Grove and I clicked "Attack" instead of "Negotiate". Now there's 3 enemies and I don't know how to fight them all? Was I supposed to click Negotiate? Because I don't think I can back out at this point. Do I have no choice but to try and beat them all?
It takes a few days to hatch, it will hatch naturally but with nurtures it will hatch a bit faster.

I also clicked attack so don't feel bad. You can't go back and re-do your decision so make sure your party has good equipment and stats so you can beat them.
