You wander the busy town. It is a trader's town by the ocean and there are several caravans getting ready to head out. There are also barges going upriver and shops where you can buy equipment and supplies.

I go up to a caravan and ask if they need an escort to the castle

Unfortunately, this caravan is going to Cairhien, not the capital city, Caemyln. However, they will accept your protection for as far as your paths join. They are not planning on leaving till the next morning, which means you have the rest of the day to wander around town. If you go with them, you will receive food and a coin for each day on your travels together.
