That is because the parents are two completely different themes. Think of the theme as like dog breeds or something. Cocker spaniel + cocker spaniel = cocker spaniel puppy, but cocker spaniel + cavalier = mutt/not purebred. You only get PB sylesties by breeding two of the same theme. The one and only exception are the Dawnbringer and Frostkeeper Aeridinies. Crossbreeding them results in a new theme, the Mistwarden. This was a special thing and no other theme is able to crossbreed like this and actually result in a theme of any kind.

so, should i use a fertile pet or infertile pet for my party if i want to breed the fertile ones, and maybe sell the infertile ones?

whether a party pet is fertile or not is entirely irrelevant; a pet being bred/on cooldown or infertile has no impact on their ability to fight, nor does being on the battle team prevent them from being bred with if that's what you want to do with them.
About the only difference it might make is to the way you organize the pets in your stables or name pets, and that's entirely your own choice.

Prizes for themed design contests tend to be given out toward the end of the fest they belong to (though with the new participation prizes, they might get handed out earlier in the fest than normal). In any case, I wouldn't be expecting any prizes from the theme contest thread until after Spring fest starts, and that's not set to start until at least next Friday.

So I'm new, and I'm pretty obsessed with the Qitari. I'm wanting to generate pets more often. But you have to have essence. Is there another way to get them besides diamonds? I would like to make Qitari that look like Bella Sara horses.

There are several ways to get essences, all detailed on this post of the Guide to Generator Essences. A short list, though, is as follows:
-For diamonds from diamond shop
-For gold from the trade broker
-For gold/diamonds/other items/pets from the item auctions forum
-Random drops from the same species via nurturing and battling
-Truly random drops from mission satchels, Jinxie's Jamboree, treasure boxes bought from the peddler in the first two map areas, the final chest after finishing a dungeon
-Can also sometimes be a prize from official games like:
Design a Gene/Mutation
Pick a Door
Festival forum games
-And, sometimes players include them as prizes in their player-run games in the Games Contests and Giveaways forum
