Here are some interesting genes and mutations for turtle species that I found in the net:
Maybe you can research prehistoric turtles too coz they got interesting genes physical features.
Here are some suggested gene and mutations and its arrangements:
Gene 1 - head and feet/fins patterns
Gene 2 - shell patterns
Gene 3 - runes
Mutation 1 - head shapes, beak types, scales/spikes/thorns on head, crown, horns
Mutation 2 - shell shapes, thorned/spiked shell, volcano on top of the shell, reinforest vegetation on top of the shell, metal armored shell, shell with wings, chained jewelry, garb, bouquet of flowers covering the whole shell, rocks on top of the shell (so much you can do with the shell)
Mutation 3 - types and shapes of feet and fins, shackles, armor bracers, mystic bracelets

Raccoons are pretty versatile in terms of manipulation I think. Most customizable features along with the fact that we definitely don't have raccoons on here. They are also objectively cute (if not also evil)
