Is it possible to capture, for example, juggernaut and Ironfang?

No. They are Named Pet NPCs and cannot be caught (the same goes for the other assorted plot-related Named pet npcs, such as the Luminous lunemara in region 3.)

(Named pets are also not the same as the Themed pet that can be found wild in the Lost Grove (lv65+ area) and festival zones.)


A notable tell for if it's a Named (uncatchable) if you aren't sure is that all Named pet npcs have white stars despite having visible traits, rather than the star colour that corresponds to their trait point count.
(all themed pets have blue star/2tp rarity at minimum)
