Hello,
Is there a way in my stables or hatchery to see what rarity my pet is? I might just be missing it, but I can't seem to find it.

The rarity of a pet is based on how many trait points it has, so it does not show up on captured pets.
A common pet has no traits, visible or carried - zero trait points
An uncommon pet has one carried trait, or one trait point.
A rare pet has two trait points, either a visible trait or two carried traits.
Etc, if I find the complete list, I'll show you.
