Is there a benefit to doing higher tiers in rewards matches? I assumed you would get better/more prizes for winning, which I'm pretty sure is a trend when doing ranked matches, but I've played several times against tier 4 and I'm seeing little difference between that and tier 2.

The quality of the prizes doesn't change: always tokens, usually snowman supplies. You can get some other things, though - some Nutcracker avatar items, and very rarely a GA griff. But you do get /more/ prizes for each round - up to 4 or 5 for winning rounds against the upper tiers.

What is considered an "upper tier"? I've been getting 3 gifts pretty consistently from tier 4 as well tiers 2 and 3.

Tier 4 gives 4 items occasionally. Tiers 5 and 6 are almost exclusively 4-5 rewards each time.
It's also worth noting that you get more for winning than losing a round.
