When I generated my starter sylesti, it showed that it had maturity values. But as I started breeding, catching, and buying other sylestis, the maturity value doesn't show up. Does that mean that a sylesti isn't aging? I used a pie on one of mine and something may have happened but nothing changed from what I could see. Could anyone tell me whats wrong?

Your pets still age every hour. However, a pet must be tested (or generated) for its maturity value to show. Pies won't have any noticeable impact unless a pet happens to be close enough to aging up to push it over the threshold.
I think... if you look at a pet's image URL, the maturity number should be in there somewhere.

also I can test you pet for 1 gold. ;) Aka free. Since it's the smallest amount you can get.

you just have to set them up...Ps: Set one up at a time...I may take a bit to answer. And might even forget.
You click on your pet than there is manage pet You will see a sale price take the 0 off or it just won't work Price but it 1 then you see id you must do the id or it gets sold and may get released so yeah.
My id is 115684. I add you as a friend and you can at me to just click on my name on here and it should bring you to my profile page and then you see an add friend button. You'll just have to wait that I answer. :)
Ps: In case you don't know how to accept friend request. Sometimes stuff becomes read on the bar click on the social bar then click or try to tab (if mobile to it as fast as you can or it'll bring your automatically to the forum) inbox...Hard to go to your inbox on phone...I know I tried really take a few time to get it wrong.
Or I send you a dm too so you can click on the number near you avatar on the banner. The scrool =image for inbox and number and number of message your have.
