So I haven't left my house at all today, but I've been logged out three or four times because it says my IP address changed. I have switched between wifi and cellular data a couple times, though. Would that cause an IP change?

Yep, it would, as you're changing networks.
In your settings, you can disable the safeguard and it will no longer log you out.
