I have three party pets, one attuned to shadow, one to light, and one to wind. I know that my tank(shadow) pet should take center, but does the position of my offense and healer matter?

Yep you should put your attacker at the top (2ed position) and your healer at bottom (3ed position)

Not Really actually.
We tend towards running light/2nd, attacker/3rd, personally.

So long as your tank is in the center, I don't think it matters.
