Sorry @Chidori for ninja'ing your riddle, but I love riddles too and just had to toss out an answer when I happened to see this one fresh posted.

The answer is: (highlight below to read)
The letter 'd'
You take the riddle literally and look at the words themselves:
"Devil" starts it, "frienD" ends with it,
"miDDle", "enD"
"DaDDy" has it thrice, "mommy" has it naught
and the roman numeral representation of 500 is D

Chi gave a happy squeal, thinking it over for a second before announcing her answer.
"The Letter D! First letter in 'Devil', It appears twice in 'Middle', 'Daddy' has three obviously, and 'Mommy' had none! Also, the letter D is the roman numeral for Five Hundred."
Chi turned her nose into the air triumphantly.

"O" Is the letter! Since "O" is used often in place of zero...Well...
Zero. The man had nothing to write.
The blind could read nothing.
The person who was dumb could repeat nothing.
The deaf man listened and heard nothing.
Zero, Therefore "O".
