I'm fairly new to this game, and I've gotten a few coins for the seasonal festival by nurturing sylesties. This seems like it shouldn't be the only way to get the coins, is it?

It is not. You may receive Sun Tokens by nurturing Sylesties, defeating enemies in the Festival Zone, opening chests in the Festival Zone, or trading with other players. There may be other methods, but these are the only ones that I am aware of.
