In this box near my gold it says I have 846 AP. What is AP? How/where do I spend it? How do I get more of it? Thanks!

Click on wardrobe. At the bottom of the page there you can find a bunch of various items that you can get using your AP points, like different hair styles, facial features, clothing and such. :)

AP is advancement points.

You earn them mostly through battling. I'm not too sure, but maybe through nurturing and breeding too. Like already mentioned, it's mainly used to buy items in the wardrobe. Go to your wardrobe, any items (mostly hair and facial designs) that have an AP in the corner and a price can be bought by diamonds or AP. Just choose pay by AP when buying.

You'll also need to have earned (need not currently have) certain amount of AP to unlock features such as stable hands. The current stable hand requires 10,000 AP I think. You can see stable hands by clicking on your picture in the stable page.
