You can nurture any eggling/hatchling, though you can only nurture each one once per day, and if you do the wrong nurture (eg. polishing a cold eggling) you don't get a scale for it.

You only get scales for nurturing other player's pets. To make it easy you can click the "Help nurture Sylesties" button on your hatchery page.
