One Piece was the one I would have recommended. I like Sould Eater, but I've read the manga and I've never watched the anime.
Fullmetal Alchemist already mentioned is quite good and quite popular ( I haven't seen all of it yet)

Since you've included My Neighbor Totoro, that's probably mean you're also looking for animated movies, not only series, and that you have probably not seen the ones made by Miyazaki and studio Ghibli yet. Most of them are really good. You should watch all of them, not only My Neighbor Totoro (Really, watch at least some of them to see if you like the style!). My personal favorite is Princess Mononoke, and Spirited away is also a classic. (And if you're feeling like watching something of a different style which will make you cry, I like Grave of the Fireflies)

Mob Psycho 100 [action]

Osumatsu-san [comedy, does not follow a main story-line/each episode will usually not correlate with the other/4th wall breaking]

Violet Evergarden

It's about a young girl who was used in the war.

Emotional, Going to make you cry, Shocking, War, and a hint of love in both ways.

The art is AMAZING and the effects are really good.

If you are sensitive to gore, don't watch it.
And plus, in Canada, a new episode every Thursday!!!

(( It's on Netflix ))

I'm more of a manga reader than an anime watcher these days so I don't feel like I could give too much advice; however, you could always take a look at something like myanimelist.com and take a look at the top rated anime list for viewing ideas. My personal favorite anime is Legend of the Galactic Heroes (also known as Ginga Eiyuu Densetsu but judging from your list I hesitate to suggest it. I do wonder if you might like Koe no Katachi/A Silent Voice. I don't know how the quality of the anime is but I very much enjoyed the manga. I'd also echo Fullmetal Alchemist: Brotherhood. I tend to like a lot of old mecha shows so I'll leave those out. lol

It might actually be worthwhile looking at top manga favorites as well and then seeing if there's been an anime adaptation.

@99echosong99 (and Moondrip) Hetalia is one of my fave (if not my fave), but it seems that people either love it or hate it. (It makes fun of history and of cliches of the countries and and their inhabitany, it should be taken as second degree humor, not first degree.). This is why I hesitated about listing it (also for the fact that it seems to famous in the US so you've probably heard about it).

Most of the ones I recommanded you are animated movies, but classics. I think everybody who like Japanese animation should have watched at least some of these films. Ghibli could be seen as Disney equivalent in term of importance and influence.

@Osore, I've never heard about Violet Evergarden, but from what you describe it's one I should look about it, it sounds like an anime I could enjoy. But I think I will wait until all episodes are out. I don't like to have wait for news episode
