Something stranged happend. I got a White Chocolate Bulbori and I found a few females via advanced search, I could breed him with.
So I got a lot of eggs, that looked like this:
And one, that looked like this:
The mother is a tagged White Chocolate Bulbori, can't be more purebred than that. So, is this a collectors edition issue? I heard about some color changes in themes over time ...
And does this still count as purebred?

Yes I believe they are the same theme but of different years, and collecter edition
The dark brown egg is of the newer colors of that theme. The tan egg is of the older version of the colors.

Thank you! So, if I crossbreed different versions it's still purebred? Or is this something you don't do?

I think it's something that's not really been talked much about yet since before the only species that had a color change was the reindeer qitari. The first release of them in 2012 had slightly different shades for a couple slots. But between them being very uncommon and that the 2012 ones aren't tagged it's never been really much of an issue.
It was this most recent spring festival that almost every pet from a previous year that returned was redone to some degree. Some more than others. I was working on a guide showing the differences but I got super busy there for a while and honestly forgot what I was in the middle of. I might try to go ahead and finish that in the next few days.
What does this mean regarding purebred? I honestly don't know. I personally prefer to think of them as different but that's just my own preference and I'm not sure what others think. There'll probably be multiple opinions.

I think it's the same Theme. Period. I breed this years Tiger Lily Aeri with last years without blinking. To me that's still a PB. They have the bloody name, "PB" is based on the purple name in the ancestry people are so excited to see. So, those purple names match, then it's a bloody PB :D

Technically anything that only has tagged parents of the same themed in its ancestry lines is purebred by definition.
So if you breed with tagged or purebred, whether it is the old or new version, so long as they are all of the same theme (in this case, White Chocolate Bulbori), it is technically purebred.
However, if you plan on selling the offsprings, you might want to keep them separate. Most players want a theme based on the colours that belongs to that particular theme. By mixing the two, the offspring will likely be of a different colour scheme from both parents (also depending on how different the old and new version are). This might affect sales. And if you're selling, it's probably good etiquette to mention that the offspring is a mix of the old and new version, so buyers will not be confused or upset if/when they find out.
But if you're planning to breed for your own enjoyment, then it's up to you whether you want to mix it or not. =)

Thank you all for your opinions. I didn't realize this was such a recent issue. I guess, there'll form a generell opinion over time. For now, I'll keep it in mind for the offspring I may want to sell.
