I caught a level 0 sylesti, so i can't train it. I'm going to have to release it because its useless...

I am not quite sure what you mean by it being useless. Could you clarify that, please? The only way you should be unable to work with a sylesti is if it is at a higher level than your starter when you are still at a low level.

You need to use it in battle to level it up and use the points you get to make the stats higher
I think that is what you are talking about. A lot of pets you capture and breed will be level 0 until about level 20-30

But i can't battle with him, because i can't go to the fields in virdian meadows anymore, he will just keep dying if i try to go exploring.

What you will want to do is send the pet on the Level 0 missions in the barracks in order to get them enough levels to be able to battle.

Another, but very slow method, is to have people view the pet. Pets gain 1 exp per view I believe.

You could also put him last in your party after Expanding it via the Sylesti plaza and go to Trollsblight Cave. The pets are level 7-9ish there.
I can't remember the cost of the Expansion though.
As long as he's in the party and things are being killed he'll gain XP.
Enemies typically tend to attack the pet that's first in the party which is why people typically put their tanks there.

Depending on how much gold you have, you could also invest in an experience orb to bring the pet up from level 0. I wouldn't recommend this too strongly as orbs can quickly add up gold wise, and you wouldn't want that pet to overshoot your others in levels.
