I've read all about the ages and how long it takes a pet to go from one stage to the next, but how do these numbers factor in with the maturity number?
For example, using the magical pie increases maturity by three days, but age isn't affected. Will my pet become an adult three days earlier than he would have?
In a similar vein, I have an egg that says it's 55/72 hours along on its profile, but the maturity number is 59. Will my egg actually hatch in 68 hours instead of 72?
If the answer to both questions is no, then what is the point of maturity?

Age is the amount of time since the pet was created.
Maturity is the measurement of its growth.

I have a pet whose maturity is 648. That's the maturity for an adult, but it's still an adolescent. Why is that?
Also, you didn't answer as to whether my egg will hatch in 68 hours or still 72.

648 is an Adult. What's making you think it's an Adolescent?
As for the Egg, it's not based on hours, but maturity as well. It will be ready to hatch when its Maturity reaches 72 (or the green bar on its profile, Incubation).

Oooh. That's because it's not tested. So without it being tested (or a generated pet), its maturity value is hidden and defaults to 648.
You would have to genetically test it to see its actual maturity value.

I just assumed it was "known" since every gene/mutation says, "None," instead of, "Unknown." Hmmmm. :-/

The "None" is saying there is no visible genes. It doesn't say unknown because it is very much known that nothing is visible. ^^ On untested hatchlings it will say "Unknown" because it really is unknown if anything will be visible.
