I just bought this Morkko and I want to know what I should set this pet as?

Since he's a tamed morkko it isn't like any of his base stats are even the slightest bit higher than any of the others, so it isn't like there's one or two stats where he'd be better off (1-2 points of difference is entirely negligible overall) (the only species I can think of off the top of my head that has a stat a lot higher than the other stats out of regular wild tameds is luffox with their ludicrous speed)

So... you can just pick whatever element you want for him and stat based on that.

As stats aren't a deciding factor here, you could be thematic and base it off his theme or something? (Rough Seas = Water or Air maybe)
