I'm not sure what is going on, but it is most likely that the people have not responded to your caroling yet. I do not think it counts for your stats until they respond...

Correct. The transaction must be completed to be reflected in the stats.
However, if you give a gift as a visitor, the rewards are calculated for that at the time of giving it - not when/if the transaction completes. But the stats for giving the gift don't update until after the transaction finishes.
