i would like to breed cool dark looking colors like black and red with white i dont know why

Sound like the best way to get to your goal is to do a project or to regenrate them but you have more restrictions and woudn't nead to breed with that option.
My advice is to mess around with the generator to figure out what speacie, traits and color emplacement you would be alright with seeing (alot ) in your stable and hatchery for the next months. Feel free to ask for opinion or help if you are unsure of your design choice. ^-^
