It realy depend of what project you are doing. In normal, non stated projects it could alwais be given as an option for those who want an offspring but cant afford the full price.
For max stat it become necessary to avoid the offsprings to be mass breed and hurt that market as they cost alot to produce usualy.
As for pure breed project it depend of the breeder.
would I get more gold if I made them max stat?
Yes, you could sell the offspring for more. The lowest max stats are at 100k. However, you will nead philters and alot more time to finish the project.

no problem, usualy the fall festival is the best moment to get a bunch of free prismatic philters. If you decide to go for a max stat start with the traits first, it will givw you the chance to get more suply and lower the risk of traits to escape the gene pool. ^-^
