If I change the colors on a purebred sylvesti, would they remain a purebred? I seriously wonder how people change colors on a purebred without losing the "theme" so to say.
Any advice on this?

If you dye a PB pet, it will retain the PB star because that is based on its ancestry being purely one theme. So long as all of a pets ancestors are that theme, it too is a PB of that theme.
Dyed Theme pets are not be considered Themed by the playerbase after being dyed, and nor will any offspring it has post-dye (though so long as the dyed parent is bred with a pet of the same theme they will also be considered PB by the algorithms.)
Theme and PB pets dyed now, post-Lupora-theme-update, do have the option to restore to the theme colours (although offspring of a dyed theme need to have a dye used on them to trigger the option)

Why are they not considered themed once they are dyed? Because they aren't official?

Because the theme is the colours- the whole point of themed pets is that they have a specific official colour set. Thusly, a dyed theme pet or PB no longer has the correct colour set, and cannot breed the theme colours true.

Um...Actually offspring don't need to be dyed in order for the update colors to work. If an PB offspring of dyed themed parents is born post-dye, there is still the option to update colors without dying that offspring in order to trigger it.

Are you sure about that? Do you have an example pet? I did a quick Advanced Search, and descendants of dyed ancestors hatched in the last few days don't seem to be affected- is it just specifically offspring of dyed parents?

Yes. At least one must be dyed and remain dyed at the time of breeding. I had a qitari that hatched this morning that had that option.
