So I'm not all that much of a newb, but I see people design avatars with things they don't have, and I don't understand...

in the wardrobe, items you don't have will have a magnifying-glass looking icon in the bottom-right corner. This is the Preview button, which you can click to display it on your avatar, though you can't save/wear it.
