(multiple players (like I'm a player) who are separate people and we ping everyone and people can join pretty much whenever and there's one person in charge. I've found that when there are lots of people playing its easier to 1) make better choices about who's gonna do what and 2) keep the game going faster.)

(Maybe. But in my experience, its harder. So many people to work with, and some get forgotten by accident and people stories get forgotten because the sheer number of them. Still, its an idea.)
