how should I best move around stats and such to help me defeat him?

What I did was leave all my battle pets the same, and waited for a seal to come up. I would then switch a pet with the stats needed into my party. When I hit explore again, the seal came up and I had that pet touch it. Then I would switch my party back to normal and continue. I repeated this until all the seals were activated (the fourth one lit when my pet touched it). After that, my pets defeated the boss with relative ease.

Yeah, If you mess with your team they will have messed up stats and might not be able to beat the boss. If I were you, I would just go into one of the level 30-35 zones and capture a couple pets or buy them leveled off the broker. Then you can just attune them to a good element for the stat you want. The good thing is that you can use those pets for missions too, because missions only require the pet to have a lot of one specific stat.
