white = common
green = uncommon
blue= rare
purple = epic
But for the number I'm not sure. I think it's the total mana they will have more start = more mana...Some one had explains it to someone else...And wait for another answer just to make sure, because I'm still new to the site...I understand the colors, but not the number...

i believe the number of stars state the difficulty of the enemy:
a normal wild sylesti we enter in the fest zone are all 2 stars i believe
but bosses in the zone have 4 or 5 stars, because they are very difficult to defeat and can wipe out your entire party like *boom*
adding on to christine:
orange = legendary
red = mythical
^i've never encountered those colors yet but i've seen either som or scath say this

So, to summarize for you:
Number of stars = difficulty, but it also does denote the amount a mana in catchable pets. As far as I know, this second part is only applicable to the first and second areas of the game, though. In the third part, the Lost Grove, and the festival zones you won't encounter catchable pets with more than two stars.
Colour of stars denotes how many trait points the pet has:
white: common = 0 trait points
Green: uncommon = 1 trait point (1 carry)
Blue: Rare = 2 trait points (1 visible or 2 carries)
Purple: Epic = 4 trait points (2 visible, 1 visible and 2 carries, or 4 carries)
Orange: Legendary = 6 trait points (3 visibles, 2 visible and 2 carries, 1 visible and 4 carries, or 6 carries)
Red: Mythical = 8 trait points (4 visible, 3 visible and 2 carries, or 2 visible and 4 carries)
Also, at least in the Lost Grove (level 60+ area), the amount of mana is determined by the rarity, rather than the number of stars.

We wrote some stuff here, with links to some of our own pets here
I think star count only really applies in Esior and Umbra, and that all pets in Astryl only have two stars? Fest Zone I can say difinitively that all pets have only two.
And in the Lost Grove, so far as I know, star count really is a difficulty indicator.
I think it's Common/Uncommon are 2-star, Rare+ are 3-star, and Themed of any rarity are 4-star?
