Typically, with a project, you come up with an end goal- say, "I want to make a max stat pet" or "I want to make a six-vis of this theme that looks like x" or "I want to make a pet that looks like y"

Then you gather the resources you need to achieve that- breeding stock, dyes, essences, philters and such, whatever.

For instance, we decided that we wanted to make Max Stat nytekrie, because we like nytes and nobody had made max stat nytes yet.

So we looked at what we had, devised a final design

And made ourself some breeding stock- you can see the entirety of our Max stat nyte project here (the link is to the tab with our breeding pairs for each generation), which took us a full year to complete (now we're considering doing 6-vis, as we have some new breeding stock from the Spring Fest)

It takes a lot of time, a lot of resources, and if you started with non-essence stock it can take a while to get the trait combos you want- here's some images from the excel document we made to keep track of the nytes we were hatching, their traits, and working out which ones would work best bred together to achieve our goals:

These two are our 'final' pair (who we haven't bred yet but will)

There are a couple of much more in-depth guides in the Player Guides forums to the breeding process, here and here

I would just like to add that I do not tend to use complicated spreadsheets in excel for my own projects. So when it comes to the actual planning of it: IF you're scared of the spreadsheet approach, there ARE other ways to plan projects.

I, myself, tend to just work it all out on paper, with the specific breeding pairs. So as a very simplified example I would have written down:

a pet + b pet = c pet

d pet + e pet = f pet

c pet + f pet = final pet

there are many ways to plan a project! Just make sure to brush up on your basic Mendelian Genetics, especially punnett squares (can google) because the breeding in this game uses it.
