Im training up a new air pet for a cannon in my party, what should I assign his proficiency point to and what gear type should I use? I have the right LVL 60 exotic gear for him ready, but what should I use until then?

Well, Strength and Dexterity usually are needed for pets that are used for battle.
In the Proficiency page each element will tell you what stats are recommended.
For example, the recommended stats for Air is strength, Dexterity and Health.
Water favors Health, Agility and Strength.

So.... is that Myrmidon gear, or what? That's basically what I needed to know.

Air pets want Strength and Dex proficiencies, and they want Myrmidon/ Storm Caller gear.

I have Storm Caller gear but my new air pet is only LvL18. I just equipped him with Myrmidon gear, thanks!
