How do I trade an item for a certain amount of gold?

After clicking on an item in your inventory, the envelope icon (it says "Mail Item to Player" when you hover over it) will light up. You can click that and add in a CoD.

Someone Wants to pay diamonds for my items... Can I set up a CoD for that, or hoW does that Work?

No, you can't set up a CoD for diamonds. Diamonds are a bit trickier since there's no direct way to trade them.
The person buying with diamonds needs to set up a trade at the currency exchange selling 1 gold for # diamonds. It's important that they don't accidentally sell # diamonds for 1 gold. Very different. Then the person giving the item/pet/whatever sends it to them with no CoD or sets the pet up for trade at 1 gold.
