So I bought a hatchling and checked his maturity and it said maturity=160 but it's not aging up to adolescent. Then a hatchling that i hatched myself says it's eight days old and he's not aging up as well.

check and see if the hatchling is in the stables, and if he is, if he has an amulet of youthful illusion. that amulet basically makes an adult look like a hatchling.

Hatchlings become adolescents at 216 hours of maturity, which is roughly 9 days if born from scratch. So both of them still have a bit more growing to do.
Just so you know, the timings are:
Hatchlings - 72 hours
Adolescents - 216 hours
Adults - 648 hours
Of which, maturity can only be seen accurately if your pet has been genetically tested.
