It gives me the options to let it hatch, help break the egg or use a philter. I don't have any philters, so what option do I use? If I help the egg hatch, does that make it weaker then if I just let it hatch?

Helping it hatch adds to its health. Letting it hatch adds to its strength. Both are better options than the agg hatching when you're not there.

Slight correction/clarification to what Shayni said: letting an eggling hatch unaided gives it a bonus point in one of any of Strength, Intelligence, Dexterity, or Agility, not solely strength.
