I read that if you defeat the one in the center the fight ends but it doesn't seem to be working for me. I was wondering if there is something I'm missing.

It might be random as to which Aryth is the real Aryth; I focused my attacks on the center, and I won after only beating one, but it might change by the player or every so often.
this was probably not very helpful.

Look at the battle log, or if you can, scan the bosses. The real aryth should have more health and deal more damage.
