So I'm a newbie....clearly. I bought some diamonds...and a mystical lupora essence cause I really want one of that breed...but now I'm stuck. I thought, in theory, that once i had the essence, the generator would allow you to "use" it to make the pet. Instead I can do nothing. How does one go about using the essences?

Just go to the generator and click "load essence." Then find the Lupora essence you bought and click on it. Then you can design it like you did with your starter sylesti.
Also, I have a few 3 or 4 vis Luporas I bred for sale in my first stable, scattered across my sale tabs, so you can look there too.
Also, Luporas are very common in Umbra Forest.
