When ever i go to stuff a stocking i pick what i want and put in the amount. But when i pick to actuelly stuff it it says "Iteam could not be properly stuffed" Any ideas why i cant?

This is because items can no longer be put into stockings. :) The last day to put items into stockings was December 31st if I'm remembering correctly.
