Hey so, it said our Sylestis would be automatically completed for us at the end of the brewing stage, but I haven't gotten them yet. I had two Sylestis going - a Morkko and a Kelpari. Are we supposed to have gotten the eggs or not yet?

Yah, you collect them when they're done.
When the fall festival is over, I think Krinadon gives them to you.

We will get them, probably in a few days. It's going to take a while, because the admin has to process everything and add them to our account manually.

What of any unused catalysts? Some people paid for those, but hadn't gotten them into the cauldrons yet. It'd be frustrating not to get them.

Unused catalysts would be wasted. Since the festival is over, and if they reuse the themes for next year's event, they'll probably reset all counters.
Krin did do a site ping to tell everyone they have 1 extra week to brew any pets they want, and any unused supplies thereafter will likely disappear:
I have seen quite a few questions regarding this so I just wanted to do a site ping and clear everything up.
First, Brewing will remain available through the 27th. Additionally, items will remain in the Diamond Shop and Festival Shop during this same time period.
So you can continue doing all Brew functions through the 27th.
Once it does closes for good, any Brews left over will NOT go to waste. We will manually process them all for everyone and you will receive your pets as is.
Lastly, any supplies left over are not guaranteed to be there next year. So keep them at your own risk!
In other words, brew everything as much as you can from now through the 27th - there is no reason not to.
