When you test breed a pair, are the results exactly what turns up in the sample images, or just a rough idea of what it could look like?

It's a rough idea~ not all test breeds turn out exactly the same. The colors and traits generated from test breeding depends on the traits (visible, hidden, carried) and colors of the pets with all results being possibilities of traits and colors that the parents can give birth to.
Let me pull up some examples to show you.
Example 1: This pair have similar traits in gene and mutation slots with a few differences in hidden and visible traits and all colors have been changed on them to match perfectly.
Below are some results from test breeding:
The colors all remain the same because I'm breeding two pets with almost 100% the same color palette.
Example 2: This pair has different traits and very different colors, so their offspring are way more random in terms of color.
Below are some results from test breeding, note that the colors generate between the hex colors of their parents colors:
