I tend to get essences more often through battling then any other means. They're rare to drop in general though. I'd personally suggest nurturing, because you at least get 1.) scales, 2.) AP and 3.) a possibility of a fabled essence drop. Battling doesn't quite get you that.

how would AP get you an essence?

AP does not get you an essence, but you do get 1AP for every 10 eggs you nurture. Nurturing in general always has a very small chance of getting you an essence. The other things listed are an added bonus to nurturing/attempting to get an essence via nurturing.
If you don't get any essences, you can always use the scales to buy items or eggs to sell to buy essences from the trade broker~
