Can anybody tell me why my pets will not go any higher then level 60?

There's a level cap set at level 60, once it is removed your pets will be able to level up beyond that.
Edited to clarify- this level cap applies to all the pets in the game :) (the only exception to my knowledge, is one of Krin's pets)

Do you know what I am supposed to do after beating vorpar? I went back to the castle and stuff but do not know what I am supposed to do am I missing something?

After beating Vorper, you are done with what the game has story line wise so far. You can breed, save up money, participate in festivals, ect. There is the winter fest coming up and then there is the mega zone that will be released as well.
