I noticed that I only can do two missions at once... is there any way to increase that number

when you're in Esior's Haven or Sanctuary of Saerielle go to the plaza, under the healer would be someone else who gives you two options Expand Party Max and Increase Mission Limit.
Just click increase mission limit. It costs money to do so and the money it costs increases each time, but really with more missions its easier to earn back that money.
