I know I can upgrade my Stables to have more Tabs. Can the Hatchery size be increased too, or do I have to just stop collecting eggs from fighting?

The Hatchery will expand as you get more eggs - you don't need to buy any extra pages or anything.
That said, keep in mind that once the eggs / hatchlings / adolescents reach adulthood they'll have to be stabled or released so you'll have to keep an eye on things to ensure you have stable space :)
