I have left over items from the winter festival. Shouldn't they have completely deleted the items? I think they should have.

Depends on what the items are. Ingredients, reindeer, frost tokens, & special spice extractors were not automatically deleted; you have to manually delete the ones you wish to get rid of. Are there specific items you're wondering about?
