For some reason, none of my fights are giving AP. I can provide a screenshot if needed.

Where are you fighting? You only get AP if the enemies you're fighting are less than ten levels lower than your level (or your pets' level, can't remember which). So if you're fighting in, say, Faerina's Shrine and you/your pets are Lv. 60, everything you fight in there is going to be a much lower level than you, and you're not going to receive AP.
