How do you see how much AP you've earned all together? I wanted a stablehand but it says I can't get one yet. I have 6900 AP but don't know if I spent any.

To my knowledge this is not something you can currently see. If anywhere I would expect it to be found on your profile with the amount of gold you've earned, etc, but it is not there. Perhaps you should make a suggestion in the Suggestions Forum?
But unless you bought anything directly from the wardrobe, you haven't spent any.

You get AP for almost everything you do.
Vote daily to get 100AP (should be a bar you can click on at the top of the page)
Battling Things
Quests (I'm not sure on this, but you have to battle things, so you get AP)
Complete Tasks from the task board in Ethernia.
I think that's everything?

I have been voting, but I've never seen a task board and I don't know what Ethernia is.

Ethernia is the town in the third region. You have to finish Aryth's Spire in Umbra Forest to unlock it I believe.
