So as the title says, I'm wondering why some pets have levels straight out of the egg? Ex: I just hatched a Griffi last night and it's level 5 o.o

That happens when the parents of the hatchling are high level. Lvl 0 parents have lvl 0 zero babies, but high leveled parents can have hatchlings up to lvl 6 I believe.

Pets with a lot of nurtures also gain levels after hatching.

Nope. Nurturing increases stats, not level.
