In the Nurturing Grounds, no. However, you can search up Hatchlings and Egglings of the species you wish to nurture in the Advanced Search, it just takes a bit longer.

Through the Nurturing Grounds, you cannot choose the species you nurture, this is mainly so when contests are going on, there are no advantages since anyone trying to nurture to earn a particular species could just select whichever species they want without nurturing any others.
This would be a big disadvantage for those who couldn't log in earlier in the day since nurtures help pets grow up, and thus, for those logging in later, the number of pets for a particular species that could be nurtured would have become less by the time they were able to play.

If you wanted, you could use the Advanced Search to look for Hatchlings and Egglings of a certain species, but this would take a longer time to nurture than doing it through the Nurturing Grounds since you'd have to open each pet's individual profile page and nurture the pet that way.
But, that would technically allow you to nurture for a specific species.
