Scalloped Cheesy Potatoes

A delicious potato casserole dish that is perfect for holiday dinner or just throwing together for a quick meal at home. After all, nothing says comfort food like potatoes!

Ingredients
-Yukon Gold Potatos
-Cheesy Creme Sauce (Made with milk, flour, butter, broth and cheese)

Why I chose this recipe
Cheesy potatoes are very much a comfort food to me, I absolutely love them. They're also a pretty easy and quick dish, and taste delicious, especially if they're scalloped.


Pork and Asparagus Sheet-Pan Dinner

A quick-and-easy taste-of home dish that the whole family is sure to enjoy. If you're really looking to spice things up, try adding apples as well!
Ingredients
-1/4 cup of olive oil, divided
-3 cups diced new potatoes
-3 cups cut fresh asparagus
-1/4 teaspoon salt
-1/4 teaspoon pepper
-2 teaspoons brown sugar
-1 teaspoon ground cinnamon
-1/4 teaspoon ground ginger
-4 boneless pork loin chops
-2 teaspoons southwest seasoning
Why I chose this recipe
I honestly have no idea lol, I was googling pork and asparagus recipes and all that was coming up were stir-fries, then I saw this recipe and thought hmm, this looks interesting!

Fried Pork Tenderloin with a side of Creamy Asparagus Bacon Gnocchi



Thinly slice the pork tenderloin, placing the slices between two paper towels and pressing it flatter with a plate. Mix egg and olive oil, dip the pork slices in the liquid, then coat the meat in a mix of flour, onion powder, garlic powder and salt. Fry until crispy and golden-brown.

For the side, make potato gnocchi out of yukon potatos, flour, salt, and egg. Then fry up 5 slices of bacon, crumbling it. Slice asparagus into small chunks, and saute with bacon and a shallot in 3/4 chicken (or veggie) broth. Add boiled gnocchi, 3/4 cup heavy cream, and 1/2 cup aged gouda. Add drizzle of olive oil and salt and pepper to taste, mixing together into thick creamy sauce. Add grated gouda and thyme as garnish, and plate with the fried pork tenderloins.



I picked this because the fried pork tenderloins are really tasty, and the first method that comes to mind when presented with a pork tenderloin. The creamy bacon asparagus gnocchi is cheesy and rich, with the tang of the asparagus still present, but not overwhelming. Yukon potatoes are great for making a quick gnocchi or rustic pasta, so is a good way to add starch without being too dense with the already heavy fried pork tenderloin.

[Pork Medallions w/Asparagus]


[Ingridients]
- Pork tenderloin (w/oil)
- Asparagus
- Salt & Pepper
- Thyme
- Paprika
- Crushed Garlic
- Butter


Cut the pork tenderloin into 2cm slices and flatten them down to an even thickness. Season each of them w/salt, pepper, thyme, paprika & crushed garlic. Add them to the pan and cook them for a few minutes before buttering them and cooking them for another 5 minutes. Separately, put 7-8 asparagus stalks in a pan w/oil, salt & pepper and grill them for a couple of minutes. Serve together.

[Cheesy Mashed Potatoe]


[Ingridients]
- Yukon Gold Potatoes
- Aged Gouda
- Salt & Pepper
- Butter


Peel and cut the potatoes into quaters and add them into a pot w/salt to boil until soft. Drain the water and mash the potatoes while adding butter, salt & pepper until the potatoes are completely mashed. Separate the mashed potatoes into bowls, then grate the cheese and add it on top of the potatoes. Wait until the cheese is melted before you serve. :)

Why? I had these super good pork medallions about a month ago in the most interesting restaurant I've frankly ever been to, and I haven't been able to stop thinking about the whole experience. This was the perfect excuse to find a recipe that I might maybe make for dinner tonight. I LOVE mashed potatoes! The more dairy you can jam into them the better, and having cheese on top is just perfect.
