So I read a few other forum posts about the Aryths Spire mirror maze, and they all said Emerald, Gold, or Garret, or some other rock/mineral. At first I thought it was the color of the mirror, but then I noticed all the mirrors were the same color. So what do rocks have to do with mirrors and what does it mean???

The colours are in the text description of the room- it's the *rooms* that are coloured, not the mirrors.
So the text is something like "you find yourself in an [x coloured] room, you see two mirrors in the room" (absolutely paraphrasing there, I don't remember the actual words, but it's something to that effect)
