Say, like, I have one Sylesti but I don't wanna put it for public breeding. But there are two people who'd like him for breeding. Is it possible to set one Sylesti up to two people?

No it isnt an option, however what you can do is make those two players set their pet for private breeding to you (assuming that they only have one each) and then set the resulting egg for them to collect.
