You found a level 83 Sylveon. Sylveon is a Fairy type. you can catch it or kill it.

You caught the Jynx. You also succeeded in defeating the next gym. next time you hunt you will have a choice of 3 pokemon.

I think PurePoison already answered, but yes, the pokemon are randomized so you could get any pokemon, including an Eevee. Now the rarity of any one specific pokemon is (I think) 1 in 720.
